假羊眼羹

[用料]羊白肠1条,田螺、绿豆粉各适量。
[制法]将羊白肠去脂洗净。田螺先用净水泡养1~2日,待水净无泥后取出,入水中煮熟后挑出螺头肉,以绿豆粉、清水调稀拌和灌入羊白肠内,紧系肠的两头,入水煮熟取出,放冷,切薄片,加五味调料作羹。
[特效]假羊眼羹因田螺似羊眼而得名。羊白肠即羊小肠。此羹先用性凉的田螺肉、绿豆放入羊白肠中煮熟,寒温相济,并能补虚。常人食之,则有清暑利水健身的作用。惟素体虚寒便溏者或中寒腹痛者不宜食用。
