[用料]海蟹肉100克,料洒50毫升,精盐10克,酱油20毫升,水发木耳、黄瓜片各150克,淀粉25克,鸡蛋1个、生葱5根,生姜7片。 [制法]将炒锅置武火上,放入清油烧热,下葱、姜末、然后放入海蟹肉煸炒,添入高汤,加料酒、精盐、酱油、水发木耳、黄瓜片、味精烧开,用水淀粉勾芡,再取鸡蛋打散调匀,浇入勺内,淋上明油即成。 [特效]海蟹羹为著名的海鲜菜肴,常作筳席上的羹食。其特点为蟹肉鲜嫩,汤羹浓香,并有酒味。
