酒蒸童仔鸡汤

[用料]活肥童子鸡1只(约750克),花雕酒100毫升,整葱结1只,生姜1小块,精盐3克,味精4克。
[制法]童仔鸡宰杀后去毛、内脏,斩去脚爪,去鸡尾部,洗净,从背脊剖开,将葱、拍破的姜、花雕酒、盐、味精放入鸡腹,加适量清水天大汤碗之中,放入鸡,加盖上笼至鸡肉酥烂后,取出,除去葱姜,大汤碗上桌即好。服食或佐餐用。
[特效]健脾补血。
