[用料]活鲫鱼1条(重400~500克),萝卜250克,料酒10毫升,猪油100克,葱、姜、盐、味精各适量。 [制法]先将萝卜洗净,削皮后切丝,放开水中氽一下;鲫鱼去鳞、鳃、内脏。锅中放猪油烧热,投入姜、葱略沙后放入鲫鱼,两面略煎,加入料酒、清水烧沸,撇去浮沫,炖汤至白色,拣去葱、姜、下萝卜丝,再用大火煮5分钟,加入盐、味精即成。 [特效]健脾利湿,清热解毒。
