[用料]净母鸡1只(重约700克),牛蒡100克,枸杞子30克,姜片5克,精盐、味精各适量。 [制法]鸡剁成块,用水冲净血污;牛蒡、枸杞子分别用水洗净。锅内放水。放在火上烧开,把洗好的鸡块焯一下水。焯好的鸡块及牛蒡、姜片放入盅内,加入水,放在火上烧开,撇去表面浮沫后,放入洗好的枸杞子,盖好盖,用小火炖2小时左右,至鸡块熟烂时,放精盐、味精,调好口味即成。 [特效]色泽红润,鲜香味醇。
