[用料]净童仔鸡1只(重约500克),桂圆肉20克,大枣30克,姜片5克,精盐、味精各适量。 [制法]童仔鸡剁成块,用水冲净血污。桂圆肉、大枣分别用水洗净。锅内放水在火上烧沸,把洗好的鸡块焯一下水。焯好的鸡埠及桂圆肉、大枣、姜片放入炖盅内,然后加入水,放在火上烧沸,撇去表面浮沫后,盖好盖,用小火炖1小时左右,至鸡块熟烂时,放入精盐、味精调味即可。 [特效]气味芳香,汤汁醇美。
